Lentinula Edodes

Known as the Mushroom Queen nutritionally and culinary speaking. It´s deliciously edible with its smooth taste, delicate flavor and pleasant texture. The Japanese word Shii-Take is omposed of “Shii”, which is the name of the tree where the fungus grows and “Take”, which means fungus.

Its rich nutritional and medicinal properties have made it a very popular mushroom. This mushroom has a dark-brown goldish cap with white and dark gray spots

Pleurotus Eryngii

It’s one of the best known mushroom species and its flavor is very much appreciated.

Its color consists of a wide variety of brown shades that go from cream to dark brown. It has somewhat of a convex shaped cap and its blades are a whitish color with a decurrent on the stem. 

Hypsizygus armoreus

It is easily distinguished by its small cap and long intense white stem. The shimeji mushrooms are rich in guanilic acid, glutamic acid and aspartic acid. They go perfectly with meats and salads and are incredibly tasty when sauteed and served on their own.

Hypsizygus Tessellatus

Agaricus bisporus

bisporus has a rounded cap that is slightly flattened on the top. During its growth, this cap is attached to the stem by a simple ring. For this reason, it curves towards the base of the musroom. Towards the end of its development the mushroom opens up and exposes its lamellae of agaricaceae. These lamellae are not attached to the stem and their hue gradually changes from a pink to dark brown. The cap can reach a diameter of 18 cm and the stem can reach up to 8 cm long and 3 cm in diameter.

Agaricus brunnescens

The Portobello mushroom is a variant of the traditional white mushroom. It’s very much appreciated in gastronomy and is also considered an exotic mushroom. Unlike traditional mushrooms, they have a much firmer consistency and a slightly sweeter taste.

Pleurotus Ostreatus

P. Ostreatus displays a cap with a diameter ranging from 5 to 20 cm, with its stem shifted to the side and usually growing next to other overlapping specimens. The surface is smooth and shiny, with colors ranging from gray to dark gray or even brown or bluish gray. It has tight, thin, blades and a white decurrent.

Flammulina Velutipes

More commonly known as the Golden Needle Mushroom. It consists of a family of elongated, fine white mushrooms that are popular among a large array of Asian cuisines. Because of their shape and size, they’re can easily be thrown into any broth or stew at the last minute. They can even be eaten raw in salads because of their interestingly crunchy texture.
